recipe, you should prepare all these ingredients before such as:

Fresh or frozen mackerel already cleaned

For marinade seasonings:

cup fresh parsley(finely chopped)

Zest
and 1 lemon of juice
·
1/4
cup of fresh mint(chopped)
·
1/2
tsp of ground coriander
·
1/4
cup of fresh cilantro (chopped)
·
1/2
tsp of ground cumin
·

tbsp olive oil
·
4
garlic cloves (thinly sliced)

tomato sauce:

4
tomatoes (chopped)
·
3
garlic cloves
·
1
serrano/ jalapeno pepper (chopped)
·
1
small shallot (chopped)
·
1
tsp of cumin
·
1
tsp of paprika
·
1/8
tsp of cinnamon
·
2
tbsp of tomato paste
·
1
tbsp of chopped cilantro
·
1/4
cup of water
·
1
tsp of coriander
Instructions:
1. The fish can be
cooked with the guts, head and bones still attached. However, for mackerel fish, it will taste better by cleaning the guts and removing the head plus
bones. You can clean the mackerel on your own or if you cannot then ask the
fishmonger to clean them all for you. Make sure to tell the fishmonger if you
want the fish head still on.
2. To make mackerel tomato sauce easy recipe, first you
should mix together all the marinade ingredients.
3. After that cover the
mackerel evenly using marinade mixture and let them stay for half an hour.
4. When you wait the
marinate process, you can prepare to make tomato sauce. Blend the cinnamon, shallot, paprika, coriander, garlic, hot pepper, cumin, 2
tbsp of olive oil, and cilantro into a paste using food processor.
5. Heat the remaining
olive oil in the skillet with medium heat. Add spice paste and stir for few
minutes and then add the tomato paste. Stir constantly for half an hour before
you pour the water.
6. Mix by stir the paste
and then add tomatoes. Bring them to simmer for ten minutes and add salt for
flavor.
7. While you waiting for
the tomato sauce to simmer, remove the marinade seasoning from the mackerel
fish and then using paper towel to pat dry the fish. Give light salt.
8. Pour and heat olive
or coconut oil on the frying pan with medium heat and fry the mackerel fish
about 2 to 3 minutes per side, you need to be careful when flip the fish.
9. Cook the mackerel
until the flesh looks crispy and the skin peels off. After you are done, remove
the fish from the pan and transfer the mackerel to
the plates.
10. Serve the mackerel by
pour the tomato sauce on top of the fish and add fresh herbs as the garnish. Mackerel tomato sauce dish is ready to be eaten.
